Gardenia fruit (Gardenia jasminoides ELLIS) is widely used as a natural food colorant and as a traditional Chinese medicine for treatment of hepatic and inflammatory diseases. Gardenia Yellow coloring, a natural color extracted from the gardenia fruit, mainly consists of crocin and crocetin.Gardenia Yellow is a yellow powder easily dissolvable in water and alcohol, but not in fat solvent. In water solvent,its bright yellow color does not vary according to PH(4-10). It appears stability in high temperature. It also has a strong ability to color proteins and carbohydrates. Gardenia yellow pigment ,with good water-solubility, had been widely used as food additive and industry dye.It is applicable to the human-body.
[Application] Coloring of ice cream ,fruit jelly,candy,cake, swelled food,confectionery,Canton flavor wheat cake, seasoning,sugar coating for tablet and cosmetics.
